Preheat the oven to 500F. Remove the heads from the sardines and discard. Rinse the sardines under cold running water and remove the backbones. Place the sardines in a shallow buttered gratin dish. In a small bowl mix together the finely grated zest of 1 of the lemons, the crÅme fraöche, the juice from the 2 lemons, and salt and pepper. Pour mixture over sardines. Bake for 5 minutes. Serve immediately with grilled country bread.
